Cajun Lasagna

Ingredients
- 1 - 16oz pkg oven-ready lasagna noodles
- 1lb Richard's Premium Smoked Sausage - sliced and quartered
- 1lb boneless, skinless chicken breasts - diced
- 1 green pepper - diced
- 1 red pepper - diced
- 1 medium red onion - diced
- 1 Tbs Richard's Cajun Seasoning
- 3 tsp minced garlic
- 2 cups shredded mozzarella cheese
- 1 cup monterey jack cheese
- 1/2 cup parmesan cheese
- SAUCE
- 2 sticks butter
- 2 - 8oz pkgs cream cheese - cut into quarters
- 2 cups heavy whipping cream
- 2/3 cups parmesan cheese
- 2 tsp garlic powder
- 1/2 Tbs Richard's Cajun Seasoning
- Salt & Pepper
Directions
- Pre-heat oven to 325
- In a large skillet over medium-high heat, combine sausage, chicken & cajun seasoning. Cook until chicken is no longer pink and juices run clear.
- Remove meat from skillet and set aside
- In same pan, saute peppers, onion & garlic until tender. Remove from heat, and stir in cooked meat - set aside
- In large saucepan add butter and heat until almost melted, add in your cream cheese and whisk until melted
- Pour in heavy cream, parmesan, garlic powder, Cajun seasoning, salt & pepper and whisk until melted and combined.
- Coat a 9x13 pan with cooking spray
- Layer 4 noodles on bottom of pan and spoon sauce over until evenly coated
- Spoon in 1/3 of the meat & veg mixture over sauce
- Sprinkle mozzarella cheese over meat & veg mixture - repeat these 2 steps 2 more times until you have 3 layers
- Top the final layer with remaining sauce and Monterey jack and parmesan cheeses
- Cover pan with foil and bake for 80 minutes - for the last 10 minutes, remove foil and bake so top gets nice and bubbly
