Andouille Sausage Tacos

Yield: 4-6 tacos

Ingredients

  • 3 Richard's Premium fresh andouille sausage links
  • 1 Tbsp grape seed oil
  • Roasted garlic for seasoning
  • 1/4 red bell pepper - sliced
  • 1/4 yellow bell pepper - sliced
  • 1/4 orange bell pepper - sliced
  • 1/4 red onion - thinly sliced
  • 1/4 cup red cabbage - shredded
  • 1/4 cup green cabbage - shredded
  • 3 radishes - thinly sliced
  • 4 Tbsp chipotle salsa (add more if you choose)
  • 4 soft corn or flour tortillas
  • 1 lime - quartered
  • cilantro sprigs (option for garnish)
  • 1/4 cup queso freso cheese - crumbled

Directions

  1. In a large saute pan, heat sausages until fully cooked through (about 10 minutes) set aside to cool
  2. In another saute pan, heat grape seed oil until hot. Add red onion and cook until softened
  3. Add red, yellow and orange peppers to pan. Cook until soft (about 5 minutes)
  4. Add salt, pepper & roasted garlic to taste
  5. Heat tortillas on grill or in skillet until soft & warm
  6. Slice sausage on bias
  7. Place 2 tortillas on each plate
  8. Place sausage slices on tortilla - lengthwise (about 5)
  9. Top with bell pepper & onion mixture
  10. Add sliced radish and shredded cabbages
  11. Drizzle with desired amount of salsa, and garnish with cilantro, queso fresco & squeeze of lime
  12. Serve & Enjoy!
