Andouille Sausage Tacos
Yield: 4-6 tacos
Ingredients
- 3 Richard's Premium fresh andouille sausage links
- 1 Tbsp grape seed oil
- Roasted garlic for seasoning
- 1/4 red bell pepper - sliced
- 1/4 yellow bell pepper - sliced
- 1/4 orange bell pepper - sliced
- 1/4 red onion - thinly sliced
- 1/4 cup red cabbage - shredded
- 1/4 cup green cabbage - shredded
- 3 radishes - thinly sliced
- 4 Tbsp chipotle salsa (add more if you choose)
- 4 soft corn or flour tortillas
- 1 lime - quartered
- cilantro sprigs (option for garnish)
- 1/4 cup queso freso cheese - crumbled
Directions
- In a large saute pan, heat sausages until fully cooked through (about 10 minutes) set aside to cool
- In another saute pan, heat grape seed oil until hot. Add red onion and cook until softened
- Add red, yellow and orange peppers to pan. Cook until soft (about 5 minutes)
- Add salt, pepper & roasted garlic to taste
- Heat tortillas on grill or in skillet until soft & warm
- Slice sausage on bias
- Place 2 tortillas on each plate
- Place sausage slices on tortilla - lengthwise (about 5)
- Top with bell pepper & onion mixture
- Add sliced radish and shredded cabbages
- Drizzle with desired amount of salsa, and garnish with cilantro, queso fresco & squeeze of lime
