WHITE BEANS WITH SAUSAGE
Yield: 8-10 servings
Ingredients
- 1lb White Beans (northern or navy)
- 1lb Richard's Premium Smoked Pork Sausage
- 4 pieces salt meat (optional)
- 1 tsp ground thyme
- 1/2 Tbsp Cajun seasoning of your choice
- 2.5 tsp chopped rosemary
- 48 oz chicken broth
- cooked white rice - for serving
Directions
- soak beans in water overnight
- slice sausage into thin rounds
- heat pan to medium and sear salt pork (if using)
- add sausage and cook until a little brown on each side
- drain beans and add to sausage with all seasonings
- add enough chicken broth until beans are covered by about 2 inches
- bring to a boil, then knock heat down and continue to simmer
- keep an eye on the liquid level - always keep it above the beans and stir so it doesn't stick to the bottom
- we recommend cooking for about 3-4 hours so beans are nice and soft and the liquid is creamy
- when to your liking, scoop up a bowl and put some cooked rice on top - ENJOY!
