Egg & Sausage Muffins

Yield: 12 Servings

Ingredients

  • 1 (16oz) package of Richard's Premium Smoked Pork Sausage, diced
  • A dozen eggs
  • 2 cups cheddar cheese, shredded
  • Salt and pepper
  • Optional: Add bell pepper, mushrooms, onions or spinach, chopped

Directions

  1. Preheat oven to 350°F.
  2. Brown and drain the diced Premium Smoked Sausage.
  3. Optional: Sauté any vegetables added until slightly translucent.
  4. Beat eggs in bowl and sprinkle in salt and pepper.
  5. Add the smoked sausage and optional ingredients to the bowl.
  6. Pour mixture into greased full size muffin pan so each is about ⅔ full. Bake for 30 minutes and use toothpick to check if done!
