Baked Boudin Balls
Yield: 24 Boudin Balls
Ingredients
- 1lb Richard's Premium Boudin - removed from casing
- 2 cups cooked brown rice (warm)
- 1/4 cup finely diced green onions
- 1 egg - whisked
- 1 cup plain breadcrumbs
Directions
- Preheat oven to 400F
- Place breadcrumbs in small bowl
- In larger bowl, mix together the boudin, brown rice and green onion until nicely blended
- Mix in the whisked egg
- Form tablespoon-sized balls, then roll in breadcrumbs until coated and place them on a lined baking sheet
- Bake in oven for about 20 minutes, or until nicely browned and cooked through
- Let Boudin Balls cool for 8-10 minutes before serving. Serve with Honey Mustard Sauce
Sauce Directions and Spice it up....
- Whisk mustard & honey together and place in small serving bowl
- To add some more Cajun kick...add Richard's Cajun Seasoning to breadcrumbs and mix. The proceed with coating
