Boudin Stuffed-Mushrooms

Ingredients
- 1/2 (16oz) package of Richard's Premium Boudin
- 1lb white mushrooms
- 1 Tbsp olive oil
- 1/2 tsp coarse salt
Directions
- Preheat oven to 350 degrees F and grease a baking sheet.
- Wash mushrooms and dry thoroughly. Remove stems and discard.
- In a large bowl, toss mushroom caps with olive oil and salt.
- Remove Boudin Sausage from casing and stuff mushroom caps.
- Place stuffed mushrooms on baking sheet and bake for 25 minutes.
