Egg & Sausage Muffins
Yield: 12 Servings
Ingredients
- 1 (16oz) package of Richard's Premium Smoked Pork Sausage, diced
- A dozen eggs
- 2 cups cheddar cheese, shredded
- Salt and pepper
- Optional: Add bell pepper, mushrooms, onions or spinach, chopped
Directions
- Preheat oven to 350°F.
- Brown and drain the diced Premium Smoked Sausage.
- Optional: Sauté any vegetables added until slightly translucent.
- Beat eggs in bowl and sprinkle in salt and pepper.
- Add the smoked sausage and optional ingredients to the bowl.
- Pour mixture into greased full size muffin pan so each is about ⅔ full. Bake for 30 minutes and use toothpick to check if done!
