Richard’s Baked Cajun Oysters
Yield: 12 oysters on the half shell
Ingredients
- 12 oysters, chucked, on the half shell
- 2 Tbs unsalted butter
- 2 garlic cloves, minced
- 1 Tbs Richard's Cajun seasoning
- 1/2 cup panko bread crumbs
- 1/4 cup grated parmesan cheese
- 3 Tbs minced parsley
- rock salt
- lemon wedges - for garnish
Directions
- Preheat oven to 450 degrees
- Sprinkle a thin layer of rock salt on a baking sheet to keep oysters in place
- Prepare oysters and place on baking sheet
- Melt butter in a skillet over medium heat. Stir in Cajun seasoning and infuse with butter
- Add garlic and sautee for 2 minutes until soft. Remove from heat and set aside
- In a small mixing bowl, add the breadcrumbs, parmesan cheese, parsley & mix together
- Slowly add in the Cajun butter mixture and combine
- Place a heaping spoonful of the breadcrumb mixture on top of each oyster
- Bake in a preheated oven at 450 degrees for 10-12 minutes until the top is golden
- Remove from oven and serve with lemon wedges
