Andouille Sausage and Pepper Pasta

Ingredients
- 12oz package of Richard's Premium Andouille Smoked Sausage, sliced
- 1 medium onion, sliced
- 1 green bell pepper, sliced
- 1 (16oz) package whole grain pasta
- 1 (14.5oz) can diced tomatoes, with garlic and basil
- Olive oil, for cooking
Directions
- First, boil water to cook the pasta. While the water is coming to a boil, slice the peppers, onions and Richard's Premium Andouille. Once the water is boiling, add the pasta and cook according to the directions on the package.
- Heat a couple tablespoons of olive oil in a skillet or fry pan. Cook the Richard's Premium Andouille until brown and drain the pan. Place the Andouille on a plate and set aside.
- Add sliced peppers and onions to the skillet and cook until tender.
- Add the Andouille and can of diced tomatoes, undrained, into the pan and stir until heated through.
- Place some of the pasta on a plate and add the sausage and veggie mixture on top. Enjoy!
