Southwest Sausage & Quinoa Lettuce Wraps
Yield: 8-10 lettuce wraps
Ingredients
- 16oz package of Richard's Premium Green Onion Smoked Sausage
- 2 Tbsp olive oil
- 1/2 large red onion, diced
- 1 small sweet potato, peeled & cubed, 1/4 inch pieces
- 1 small zucchini
- 1 ear sweet corn, kernels removed
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 cups cooked quinoa
- 8-10 lettuce leaves, washed & dried
- Roasted granulated garlic, salt & pepper to taste
- Fresh cilantro for garnish
Directions
- Rinse lettuce leaves and pat dry with paper towel - place on plate
- Cook quinoa according to the directions and set aside.
- Coin cut sausage and add to pan with olive oil. Cook until browned.
- Peel and cube the sweet potato. Dice the zucchini. Slice corn off of the cob. Dice onion.
- Add the sweet potato, zucchini, corn and onion to the pan.
- Add cumin, chili powder and garlic - stir well.
- Cook and stir over medium heat until onion is translucent.
- Combine veggie mixture with cooked quinoa & sausage - mix well
- Pour desired amount of mixture into lettuce leaves
- Garnish with fresh cilantro and enjoy!
