Southwest Sausage & Quinoa Lettuce Wraps

Yield: 8-10 lettuce wraps

Ingredients

  • 16oz package of Richard's Premium Green Onion Smoked Sausage
  • 2 Tbsp olive oil
  • 1/2 large red onion, diced
  • 1 small sweet potato, peeled & cubed, 1/4 inch pieces
  • 1 small zucchini
  • 1 ear sweet corn, kernels removed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 cups cooked quinoa
  • 8-10 lettuce leaves, washed & dried
  • Roasted granulated garlic, salt & pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Rinse lettuce leaves and pat dry with paper towel - place on plate
  2. Cook quinoa according to the directions and set aside.
  3. Coin cut sausage and add to pan with olive oil. Cook until browned.
  4. Peel and cube the sweet potato. Dice the zucchini. Slice corn off of the cob. Dice onion.
  5. Add the sweet potato, zucchini, corn and onion to the pan.
  6. Add cumin, chili powder and garlic - stir well.
  7. Cook and stir over medium heat until onion is translucent.
  8. Combine veggie mixture with cooked quinoa & sausage - mix well
  9. Pour desired amount of mixture into lettuce leaves
  10. Garnish with fresh cilantro and enjoy!
