Southwest Sausage Quinoa Lettuce Wraps

Ingredients

  • 16oz package of Richard's Premium Green Onion Smoked Pork Sausage
  • 2 Tbsp olive oil
  • 1/2 large onion, diced
  • 1 small sweet potato, peeled & cubed, 1/4 inch pieces
  • 1 small zucchini
  • 1 ear sweet corn, kernels removed
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 2 cups cooked quinoa
  • 6 lettuce leaves, washed & dried
  • Garlic salt & pepper to taste
  • Cilantro and/or red onion for garnish

Directions

  1. Rinse lettuce leaves and place on a plate.
  2. Cook quinoa according to directions and set aside.
  3. Coin cut the Richard's Premium Green Onion Smoked Pork Sausage and add to pan on stove with olive oil. Cook until browned.
  4. Peel and cube the sweet potato. Dice the zucchini. Slice corn off of the cob. Dice onion. Add the sweet potato, zucchini, corn and onion to the pan.
  5. Add cumin, chili powder, garlic salt and pepper to taste. Cook and stir until onion is translucent.
  6. Pour mixture into lettuce leaves, along with cooked quinoa.
  7. Garnish with cilantro and red onion.
