White Beans with Spinach & Sausage
Yield: 4 Servings
Ingredients
- 3/4 (16oz) package of Richard's Premium Smoked Pork & Beef Sausage, Sliced
- 2 cups of chicken broth
- 2 cloves of garlic
- 1 tsp dried oregano
- 1 Tbsp olive oil
- 2 cups cannellini beans, rinsed and drained
- 1 14.5oz can of diced tomatoes
- 6 cups baby spinach leaves
- Freshly ground black pepper, to taste
Directions
- Cook the Richard's Premium Smoked Sausage slices in a cast iron skillet or non-stick pan on medium to high heat.
- Pour chicken broth, beans and garlic into a large pot. Place on medium to high heat and bring to a simmer.
- Add the oil, oregano and sausage into the pot. Stir together before adding in the tomatoes. Heat through until beans are tender. Add spinach and cook until the leaves are wilted. Stir to combine and add freshly cracked pepper on top.
